Our honey hasn't been pasteurized or fine filtered so contains pollen, propolis, live enzymes and beeswax, all the good stuff, although it isn't suitable for infants under twelve months.​ Real honey is an anti-inflammatory, an antioxidant and an antibacterial agent. It is used in Cancer treatments, is good for cardiovascular disease and reduces cholesterol levels.

 

Honey is part of human evolution. In the Quran, honey is described as "the best source of healing and everything that the bee produces is medicine". Real honey can not be synthesized and real honey never goes off, it may set (crystalize) but can be cleared by warming in hot water years after it was bottled. Honey crystallization is a sign of quality and shows that the honey has not been heat treated.

Obviously the bees take what ever wild seasonal forage they like. This means that real honey is very seasonal and its taste, colour and consistency changes from month to month and year to year. There is usually light and dark honey in the box and for the connoisseur, chunk honey comb. The darker honey has much more propolis, pollen and bees wax in it so has a stronger, granular taste but is ridiculously good for you. The lighter honey is classic spun unpasteurized table honey.

 

Our hens are free-range rescue hens and live happily in our garden with their Pekin bantam rooster 'Pedro' and in harmony with the bees, keeping the hives free of pests. Their feed is garden mix with added Omega-3 oil, veg from the garden and rain water.
